Lumpia Bayam Panggang - Baked Spinach Spring Rolls
Ingredients
- 12 spring roll skins
- 1 egg, lightly beaten
- 2 tablespoon grated parmesan
- Spinach filling (mix the following together)
- 250 gram blanched spinach, roughly chopped
- 100 gram grated cheddar
- 1 egg, lightly beaten
- 1/4 teaspoon salt
- 1 teaspoon ground pepper
- 4 cloves garlic, fried and finely ground (*)
- 1 tablespoon oil
- Condiments
- Thai sweet chili sauce
- tomato ketchup
- sriracha
Instructions
- Preheat oven to 180 Celsius (350 Fahrenheit), and line a baking dish with parchment paper.
- Take one spring roll skin, place 2 tablespoon of filling near one of the edge, and wrap into a little packet. (Please see photo for step-by-step on how to wrap the spring roll).
- Arrange spring rolls on the prepared baking dish, brush the top with egg, and sprinkle with parmesan.
- Bake in preheated oven for 30 minutes, or until golden brown.
- Serve with array of condiments.

- (*) Or 1 teaspoon garlic powder.
