Serves: 4 cups

Ingredients

  • 1 pineapple, diced 1/8" to 1/4"
  • 2-3 jalapeno, diced 1/8" to 1/4"
  • 2-5 Thai bird eye chilies, seeded and sliced (optional)
  • 3 scallions, thinly sliced
  • 1/4 cup cilantro leaves, thinly sliced
  • 1 lime, zest and juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

Instructions

  1. Place all ingredients in a large mixing bowl. Gently mix everything together. Adjust seasoning as needed.
  2. Place in clean glass jar(s) and chill in the fridge before serving. The salsa should be fresh for up to 1 week.
