Grilled Shishito Peppers

Use a cast-iron skillet to grill shishito peppers to smoky blistering perfection. Dress it with a drizzle of olive oil, a sprinkle of salt, and a squeeze of lemon.

Shishito pepper is a mild variety of chili pepper from East Asia. These peppers are usually picked while green and have a wrinkled surface. You may also find these sold in a Korean grocery store as kkwari-gochu.

The most popular way to serve shishito peppers is by grilling/broiling. They are very fragrant on their own and don’t require a lot of seasoning. In my recipe, I only use olive oil, sea salt, and lemon juice. You may find other more complicated recipes using soy sauce or dashi (Japanese stock), which can be just as delicious as my simple version.

This is a super easy recipe using only four ingredients:

  • shishito peppers
  • olive oil
  • sea salt
  • lemon
(1) Pierce each pepper with the tip of a sharp knife. (2) Heat a cast-iron pan over medium heat until hot before grilling the peppers. (3) Grill until both sides of the peppers are blistered and soft. (4) Toss grilled chili peppers with olive oil and sea salt.

Grilling and serving shishito peppers

1. Prepare shishito peppers

Wash, drain, and pat dry shishito peppers. Use a sharp knife to pierce each pepper.

2. Preheat pan

Heat a cast-iron pan over medium-high heat until very hot to mimic an outdoor grill.

3. Grill peppers

Once the pan is hot, grill shishito peppers until both sides are blistered. The peppers will turn soft.

4. Season peppers

Transfer the grilled shishito peppers to a bowl, drizzle with olive oil, and sprinkle with sea salt.

5. Serve peppers

Serve grilled shishito peppers immediately with a couple of lemon wedges.
