Spring rolls are always a hit as appetizer. Deep frying is by far the most common way of cooking spring rolls, but they are actually pretty delicious even when baked. If you want to try baked spring rolls, you can start with this super easy recipe for lumpia bayam panggang - baked spinach spring rolls.

Spinach Cheddar Filling

Let’s prepare the filling. I choose a cheesy filling since cheese is always delicious when baked :) You will need some blanched spinach (250 gram), you can start with using fresh spinach or even frozen one. Next grate some cheddar, but you can also use some feta cheese. The rest is just egg, garlic, salt, pepper, and oil.

Shaping and Baking the Spring Rolls

There are several ways you can shape your spring rolls, but if you need a guide, I give a step-by-step photo on how I shape mine. Simply place all your shaped spring rolls on a parchment paper lined baking dish (I use a 7”x11” Pyrex baking dish) and brush with beaten egg and sprinkled with grated parmesan. Finally, bake in preheated oven (180 Celsius/350 Fahrenheit) until golden brown, about 30 minutes.
