Lumpia Bayam Panggang - Baked Spinach Spring Rolls

Spring rolls are always a hit as appetizer. Deep frying is by far the most common way of cooking spring rolls, but they are actually pretty delicious even when baked.

Spinach Cheddar Filling

Let’s prepare the filling. I choose a cheesy filling since cheese is always delicious when baked :)

You will need some blanched spinach (250 gram), you can start with using fresh spinach or even frozen one.

Next grate some cheddar, but you can also use some feta cheese.

The rest is just egg, garlic, salt, pepper, and oil.

Shaping and Baking the Spring Rolls

There are several ways you can shape your spring rolls, but if you need a guide, I give a step-by-step photo on how I shape mine.

Arrange all your shaped spring rolls on a parchment paper lined baking dish (I use a 7"x11" Pyrex baking dish) and brush with beaten egg and sprinkled with grated parmesan.

Finally, bake in preheated oven (180 Celsius/350 Fahrenheit) until golden brown, about 30 minutes.

Ingredients

  • 12 spring roll skins
  • 1 egg, lightly beaten
  • 2 tablespoon grated parmesan
  • Spinach filling (mix the following together)
  • 250 gram blanched spinach, roughly chopped
  • 100 gram grated cheddar
  • 1 egg, lightly beaten
  • 1/4 teaspoon salt
  • 1 teaspoon ground pepper
  • 4 cloves garlic, fried and finely ground (*)
  • 1 tablespoon oil
  • Condiments
  • Thai sweet chili sauce
  • tomato ketchup
  • sriracha

Instructions

  1. Preheat oven to 180 Celsius (350 Fahrenheit), and line a baking dish with parchment paper.
  2. Take one spring roll skin, place 2 tablespoon of filling near one of the edge, and wrap into a little packet. (Please see photo for step-by-step on how to wrap the spring roll).
  3. Arrange spring rolls on the prepared baking dish, brush the top with egg, and sprinkle with parmesan.
  4. Bake in preheated oven for 30 minutes, or until golden brown.
  5. Serve with array of condiments.

Notes

  • (*) Or 1 teaspoon garlic powder.
