Roast Asparagus and Miso Dressing

Learn how to make this awesome miso dressing that pairs well with roast asparagus, and any kind of roast veggies. Works great as a salad dressing too.

You can use miso paste to make more than miso soup. You can whip up this outragously delicious miso dressing that goes amazingly well with your favorite salad, roast vegetables, and even steaks! In this recipe, I choose to pair the miso dressing with roast asparagus.

What goes into this roast asparagus with miso dressing?

For the roast asparagus, you will need:

  • 1 lb. (450 gram) asparagus, trimmed the tough ends
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 3 tablespoon olive oil

For the miso dressing, you will need:

  • 90 gram miso paste, you can use white miso, red miso, or combo (awase) miso
  • 90 ml (6 tablespoon) rice vinegar
  • 100 ml (6 tablespoon + 1 teaspoon) olive oil
  • 1 teaspoon soy sauce
  • 1 clove garlic, grated
  • 2 tablespoon maple syrup (vegan option), or honey (everyone else)

How to roast asparagus

Roasting asparagus, and vegetables in general, in an oven is a super simple job. Here is how I do it.

  1. Preheat oven to 220 Celsius (425 Fahrenheit).
  2. Coat asparagus with salt, pepper, and olive oil. Arrange in a baking tray.
  3. Bake/roast in the preheated oven for 15 minutes.

How to make the miso dressing

This amazing miso dressing comes together in minutes. Simply gather all the ingredients in a mixing bowl, and whisk until it comes together. You will know it’s done when the olive oil no longer separates in its own layer. :)

Save the miso dressing for other dishes

This recipe will yield a pretty generous amount of miso dressing. Actually, you will end up with about twice the amount you will need for 1 lb. (450 gram) of roast vegetables.

Personally, I love this dressing and have been using it to dress all sorts of roast vegetables. Try it with roast sweet potatoes and roast pumpkins/squashes. This dressing works great with all kinds of salads too. :)

Ingredients

  • Roast asparagus
  • 1 bundle (450 gram) asparagus, trimmed
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper.
  • 3 tablespoon olive oil
  • Miso dressing
  • 90 gram miso paste (any type)
  • 90 ml rice vinegar
  • 100 ml olive oil
  • 1 teaspoon soy sauce
  • 1 clove garlic, grated
  • 2 tablespoon maple syrup (or honey) (*)

Instructions

  1. Preheat oven to 220 Celsius (425 Fahrenheit).
  2. Coat asparagus with salt, pepper, and olive oil. Place in a baking tray.
  3. Bake in preheated oven for 15 minutes.
  4. Meanwhile, make the miso dressing. Combine all ingredients together and mix well with a whisk.
  5. Transfer roast asparagus to serving plate, and drizzle some miso dressing on top as sauce.

Notes

  • (*) Use maple syrup for vegan.
