Roasted Sweet Mini Peppers

These roasted peppers are so easy to prepare using only a handful of ingredients. They will perk up any main dish and a must-have side dish for your BBQ party.

Sweet mini peppers are super delicious, even when eaten raw, but they are amazingly yummy when roasted, grilled, or broiled.

The colorful peppers are such a delight to look at, and they can perk up just about any main dishes you pair them. I especially love making these to accompany any summer BBQ. :)

We need:

  • sweet mini peppers
  • olive oil
  • salt
  • pepper
  • garlic powder
  • grated Parmesan cheese

Since this recipe doesn’t need many ingredients, choosing the best quality of ingredients is a must.

For example, use sea salt or Himalayan pink salt instead of table salt. Also, buy a small block of high-quality Parmesan cheese and grate it as necessary.

Cut each pepper into halves lengthwise and toss with olive oil, salt, pepper, garlic powder, and Parmesan cheese.

Season and roast sweet mini peppers in the oven

Preheat oven to 400 Fahrenheit (200 Celsius).

Wash, drain, and pat dry sweet mini peppers. Cut each pepper into two halves lengthwise, removing the seeds as needed.

Place mini peppers in a mixing bowl, add olive oil, salt, pepper, and Parmesan cheese, gently toss to coat.

Arrange seasoned mini peppers in a single layer on a baking sheet, such as a half-sheet pan.

Bake the mini peppers until tender, about 25-30 minutes. Serve immediately.

Tips

1. Add herbs

Although these peppers are lovely and delicious with minimal ingredients, you can add herbs to perk them up even more. My favorite is to add about 1⁄2 teaspoon of dried oregano and 3 sprigs of fresh thyme along with the salt and pepper, then add about a handful of chopped fresh basil to the roasted peppers.

2. Use a broiler

If you prefer to char and blister the peppers, use your oven broiler and broil until you see some chars and blisters, about 5 minutes.

3. Use a grill

You can use a charcoal/gas grill to grill these peppers, especially if you are also grilling other food for your BBQ event. Or, you can cook the peppers on a stove-top grill pan or even a well-seasoned cast-iron skillet using your stove.
